Process: Washed. Fully ripe cherry was pulped using a Penagos eco-pulper. The coffee was then fermented/soaked in water for 12 hours before being removed to drying tables.

Sookoo Coffee was founded in late 2018 by Ture Waji. Affectionately nicknamed the "King of Guji", Ture has supreme expertise when it comes to farming and producing coffee in the Guji zone. We are thrilled to offer yet another amazing coffee from Ture and his team at Sookoo. Tima is an especially exciting lot, as it is our first-ever washed process coffee from Ture. In past years, he has produced several of our stellar natural/dry process coffees including sugary-sweet, zippy, and berry forward hits like Bookkisa and Shoondhisa (both of which will return to our menu later this season!).
In Guji, many coffee lots are named after the Kebele or sub-Kebele where the coffee is farmed. Tima, for instance, was grown by farmers in the Tima sub-Kebele. With notes of lime, peach, fresh hops, and melon, Tima soars as a shining example of the highest quality Guji coffees. Whether hot or iced, its safe to say we'll be brewing this stunner often.
