We've purchased Balbina Sabillón's Parainema variety since 2019, but this is the first year we are offering her Gesha variety! We are proud to roast coffee from Balbina's 1.5 hectare farm, Las Flores, located in Santa Bárbara, Honduras. Balbina is a third generation coffee farmer who first learned how to grow coffee from her father when she was a child. With the help of her sons, she first planted her own coffee in 2016. For the 2018/2019 crop, she prepared her first specialty micro-lot with support from Benjamin Paz and exporter, San Vicente. 

In 2021, Balbina and her son planted their first 1/2 hectare of the Gesha variety. This year, we offer a small amount of her natural processed Gesha. During processing, the cherries are picked at peak ripeness and then put in a tank with water to float any empty or unripe cherries. Then, they are put in a parabolic solar dryer for 18 days. During this time, the cherries are sorted by hand to remove any imperfections. 

We roast this lot lightly and delicately to highlight the vibrant floral and sweet fruity notes. We taste strawberry, peach blossom, and cocoa. For peak flavor experience, recommend waiting at least 1-2 weeks before brewing this coffee.
