Tasting Notes: Raspberry, Sweet Cream, Lemon Curd
As summer winds down, we savor the release of our seasonal signature blend, Ellipse! For us, it's a simple way to celebrate the changing of the seasons and the arrival of freshly harvested Ethiopian coffee.
Ellipse shares the versatility and approachability of Arboretum while offering a lighter, brighter flavor profile. Magic happens when a jammy and sweet natural process coffee is blended with clean and citrusy washed coffee. The result is a complex and balanced cup, ideal for espresso or filter. Ellipse features coffee from the Tokuma group, a collective of producers in Western Ethiopia. Five years ago, we began our relationship with them, first purchasing from the founding member, Mensur Aba Hika. It is a special year for Ellipse, as the blend is made with just two lots — one from Mensur himself and one from his wife, Nesru Aba Nura. Together, they have four children and work closely to produce stellar separated lots.
The Tokuma group grows, processes, and exports their own coffee, rather than selling it to an exporter or to the Ethiopian Commodities Exchange (ECX). Just a few years ago, exporting independently wasn’t an option for smallholder farmers. However, recent changes in export regulations have made this possible. This allows each lot from Tokuma to be fully traceable back to the specific farm where it was cultivated. More importantly, it helps lower production costs and ensures that more money stays with the farmers who work so hard to bring this coffee to market.
