Producers carefully select cherries at peak ripeness, ferment them for 24 hours, de-pulp them, and ferment them once more for an additional 36-72 hours. Finally, cherries are washed and dried—typically on patios.

With La Victoria, we welcome a new producer group to our menu. We chose this particular lot for its balanced flavor profile—florality, deep sweetness, bright acidity, and juicy notes of red fruit. It is a gem of a coffee and we are honored to share with you. La Victoria is sourced from our good friends at The Coffee Quest. It is a communal lot comprising producers from Northern Huila, specifically Santa Maria and Palermo. This group includes farmers from their pioneer project, Productores del Futuro (Producers of the Future), whose farms sit between 1,700 and 2,300 meters above sea level near the foothills of the Huila Volcano (National Park Nevados de Huila).
The region is special not only for its high elevations but also for preserving traditional varieties such as Typica (the oldest coffee variety in the world) alongside newer varieties such as Castillo, Pink Bourbon, Caturra, Chiroso, San Bernardo, and Colombia.
