Shoondhisa is back! The familiar taste of natural Ethiopian coffee is truly something special. From the same producer who brought our favorite washed Ethiopia of the summer, Tima, enters Shoondhisa. No doubt this is another sparkly coffee, this time, in the form of a full bodied fruit bomb with juicy, sticky-sweet berry flavors. Ture Waji, affectionately nicknamed the “King of Guji” is a master when it comes to coffee growing and production.
We’ve purchased coffee from Ture and his team at Sookoo coffee for over four years and it’s a privilege to grow alongside them. We especially love Shoondhisa for the clarity and nuanced flavor found in the cup. We get notes of berry fro-yo and lemon cake. The aftertaste is quite sweet with strong notes of cocoa. On a hot day, it’s twice as nice brewed over ice.
Shoondhisa comes from smallholder farmers in the Shoondhisa kebele who deliver cherries to a private drying station called Suke. All cherries delivered to the Suke drying station are organically produced. Founded in late 2018/early 2019, Ture Waji and his brother Assefa founded their company Sookoo coffee and we are excited to bring another amazing coffee from them to our menu. Located in Odo Shakiso within the Oromia Region and Guji Zone, Ture and Assefa primarily focus on producing naturally processed coffees sourced from the surrounding Kebeles. Each of the lots they produce are then named after the Kebele or sub-kebele, e.g., Tima & Bookkisa.
