Pedro Sagastume is a third generation coffee producer who has been managing his family’s coffee plantations for over 30 years. He has a central wet mill and drying facility that collects and processes coffee from the four plantations, but this lot is doubly selective: it’s a 100% Pacas variety from a single plantation - Los Quetzales.

Los Quetzales is an exemplary testament to.the Pacas variety, a plant variety known for its smaller stature that yields coffee of sugary sweet and sticky flavor characteristics. This is our second year purchasing Los Quetzales and similar to El Rincon, this is yet another delicious offering brought to us with the help of the San Vicente exporter who actively strives to support and introduce farmers with importers, allowing us to bring complex and impressively processed coffees out of the region of Santa Bárbara.

This year’s lot shines as one of those perfect breakfast coffees, particularly great as a filter offering where sugary and delicate acidity is undeniable. When brewed you’ll taste molasses and savory pecan pie rounded out by sweet tropical fruits creating a coffee that has your taste buds feeling coated in sugar.
