La Muralla is named for an informal group of young producers from San Agustín, who sometimes join forces to create truly special microlots. In this case, it’s a stellar Pink Bourbon selection. Pink Bourbon is a hybrid of Red & Yellow Bourbons. It’s got good leaf rust resistance, but it’s pretty rare, because it’s a naturally occurring expression of recessive genes. On a single farm, it could be tempting to blend these cherries into a larger lot of Caturra and Castillo. We’re feeling really lucky that these three farmers are as excited about showcasing the range of flavors available in Colombian varieties as we are.

If you’ve ever thought, ‘I like a sundried coffee, but I don’t want a whole cup of it’, this is the coffee for you. It’s vibrant and fruit-forward and floral and fun, and it never tips over to anything remotely winey. Why? Because this is a fully washed coffee, grown high in the mountains of Huila. Washed coffees from this region are known for complex fruitiness, sugared sweetness, bright acidity, and medium body. We taste raspberry, lemon-lime, grenadine, and red currant. In mid-palate, some florals and herbs float in, especially like hibiscus mint tea, but it finishes on a round, almost fluffy sweet cream note that reminds us of vanilla pudding and cream soda.
